We specifically covered four different cheeses&#8211;<\/p>\n<ul>\n<li><a href=\"https:\/\/artofeating.com\/epoisses-cheese\/\" target=\"_blank\">Epoisses<\/a><\/li>\n<li><a href=\"http:\/\/www.vermontcreamery.com\/coupole-1\" target=\"_blank\"><em>Geotrichum candidium<\/em> rind aged goat cheeses<\/a><\/li>\n<li><a href=\"https:\/\/en.wikipedia.org\/wiki\/Bleu_d%27Auvergne\" target=\"_blank\">Bleu d&#8217;Auvergne<\/a><\/li>\n<li><a href=\"http:\/\/www.janetfletcher.com\/blog\/2015\/9\/20\/triple-play\" target=\"_blank\">La Tur<\/a><\/li>\n<\/ul>\n<p>&#8211;but then discussed many other typs and how to replicate specific flavors and\/or textures in our own cheeses.<\/p>\n<div id=\"attachment_5714\" style=\"width: 810px\" class=\"wp-caption aligncenter\"><img loading=\"lazy\" decoding=\"async\" aria-describedby=\"caption-attachment-5714\" src=\"https:\/\/mainecheeseguild.org\/wp-content\/uploads\/IMG_20170404_110637831.jpg\" alt=\"\" width=\"800\" height=\"450\" class=\"size-full wp-image-5714\" srcset=\"https:\/\/mainecheeseguild.org\/wp-content\/uploads\/IMG_20170404_110637831.jpg 800w, https:\/\/mainecheeseguild.org\/wp-content\/uploads\/IMG_20170404_110637831-150x84.jpg 150w, https:\/\/mainecheeseguild.org\/wp-content\/uploads\/IMG_20170404_110637831-300x169.jpg 300w, https:\/\/mainecheeseguild.org\/wp-content\/uploads\/IMG_20170404_110637831-768x432.jpg 768w\" sizes=\"auto, (max-width: 800px) 100vw, 800px\" \/><p id=\"caption-attachment-5714\" class=\"wp-caption-text\">(starting top left, moving clockwise): Bleu d&#8217;Auvergne, Epoisses, Coupole, Crement<\/p><\/div>\n<p>In addition to covering investigation and research, we tasted examples of all the cheeses and broke them down categorically.&nbsp;<\/p>\n<p>During the last portion of the workshop the participants had a chance to share their own cheeses with challenges to get feedback from Dixon and others in the group.
