I am working on a cheese room, and would like to know what you have discovered in the way of lighting. cheapest fixtures (NOT long florescent ) .. can I get away without the CAGE surround ?

Hey all, I volunteered at the last cheese guild meeting to find out who is interested in selling cheese at the guild booth at the common ground fair this year.
